Polysorbates are a large class of nonionic surfactants, which have the functions of emulsification, diffusion, solubilization and stability. It is widely used as emulsifier, dispersant, solubilizer and stabilizer in pharmaceutical, daily chemical, food and textile industries. As an emulsifier, the change of high concentration electrolyte and pH value has little effect on its emulsifying ability, and it is a kind of excellent oil/water emulsifier. When preparing oil/water emulsifier, it is often used in combination with sorbitan esters, and the stability of the emulsion is better. By changing the type and dosage of emulsifier used with it, emulsions and creams with different textures and consistency of water/oil type or oil/water type can be prepared.
